Meatless Mondays ... Quinoa Burgers!

This recipe is my favourite veggie burger recipe. As summer has arrived (semi-officially, marked by the Victoria Day weekend last weekend and the Memorial Day weekend for Americans this past weekend) it is the beginning of burger season in my house!! The recipe calls for pitas, which are great, but I also love them on whole wheat English muffins!! If you skip the Tzatziki sauce and replace the egg with egg substitute, you can make this recipe vegan!

Quinoa Burgers
1/2 cup rinsed quinoa, cooked
1 medium carrot, chopped coarsely
6 T, chives, chopped finely
15 ounces white navy beans, drained and rinsed
1/4 cup plain dried breadcrumbs
1 large egg, lightly beaten
1 T ground cumin
1 t coarse salt
1 t ground pepper
2 tablespoons olive oil

Tzatziki Sauce
1/2 cup plain nonfat Greek yogurt
1 T lemon zest
1 T fresh lemon juice
1 small clove garlic, chopped fine
1/2 English cucumber, shredded and drained


Place the carrots in the bowl of a food processor, fitted with the chopping blade attachment. Pulse until the carrot is very finely chopped.

Add cooked quinoa, chives, beans, breadcrumbs, egg and spices to the carrot. Pulse until mixture is combined but still slightly chunky.

Form into four equal sized burger patties. Refrigerate for half an hour, or until firm.

Heat oil in a non-stick skillet (I prefer a cast iron skillet) over medium heat. Cook burgers until browned and cooked through, approximately 8-10 minutes per side.

To make sauce, combine ingredients in a bowl and serve!

The Ultimate Burger & Ceasar Salad


I have been on a search this summer, to find the ultimate burger recipe. I think this one is pretty close! I think it is always better to grind your own meat. We used top sirloin. Whatever cut you choose, you must ensure that there is enough fat included, otherwise the burger will be dry and mealy. Most of the research that I have found suggests a 15-20% ratio of fat to meat. If you are using a leaner cut of meat (like turkey), I would suggest adding some bacon to the mix, in order to up the fat ratio, so as to ensure a juicy burger!

I think a good burger needs no other accompaniment than an equally fantastic salad. Growing up in my house, salad almost always meant Caesar salad. This version (my mother's) is very garlicy, so I wouldn't suggest it prior to a first date or even if you have a job interview in the next week. But if you are happily in love (or happily single) and well employed, this salad is well worth the day or two of keeping your distance.

Ultimate Burger
~ makes 6 well sized burgers ~

2 lbs top sirloin beef, ground
1 egg
1/4 cup dry or fresh bread crumbs
1 T Dijon mustard
3 garlic cloves, chopped fine
4 drops liquid smoke
1/4 cup fresh Greek oregano (or rosemary), chopped fine
1/3 cup feta cheese, crumbled
salt and ground pepper
fresh kaiser rolls

Combine all ingredients and form into six equal burgers.
Grill to medium.
Serve on kaiser rolls with sauce (recipe below)


Sauce:
1/2 cup mayo
large handful basil leaves, chopped fine
1 T lemon juice
1 T Dijon mustard
1 clove garlic, chopped fine

Combine and serve!


Colleen's Caesar Salad
2 egg yolks
1 T lemon juice
8 shakes worcestershire sauce
2 t anchovy paste
2 T red wine vinegar
2-3 cloves garlic, chopped fine
1 T Dijon mustard or 2 t dried mustard
salt and pepper
1/2 - 1/3 cup extra virgin olive oil
1 large head romaine lettuce
1/4 red onion, chopped into rings
1 cup croutons
1/2 cup Parmigiano-Reggiano cheese, freshly grated

Combine first eight ingredients with a hand blender.
Slowly add olive oil, while blending, until desired consistency is reached (should be very creamy).
Toss dressing with lettuce, onions croutons and cheese.

lamb burgers


I had a craving for lamb burgers, and we wanted to try out our new meat grinder, so we purchased a leg of lamb and made our own ground lamb. The meat was fantastic! Just enough fat to make the burgers juicy and flavourful. I have made the burger recipe below with many different types of fresh herbs: chives, mint, rosemary and oregano all work very well.

Lamb Burgers
2 lbs freshly ground lamb meat
1 egg
2 T plain yogurt
2 T dijon mustard
1/3 cup fresh breadcrumbs
3 cloves garlic, minced
3 T fresh dill, chopped well
large pinch salt
large pinch freshly ground black pepper
6-8 portabella mushrooms
250 grams goat cheese (chevre)

Combine ingredients and shape into patties that are as large or small as you like. Grill over high heat until done to your likeness. Meanwhile, grill the portabella mushrooms, gill side down and then flip to grill opposite side. Top with 2 T chevre, per mushroom. Serve mushrooms over burgers on a multigrain roll!
